I was just thinking as I was preparing this post, that I have actually posted a lot of dinners using quinoa lately. And all of them have been kid approved!
And now this. Quinoa Cheeseburger Casserole. Let me tell you about this Cheeseburger Quinoa Casserole. It’s pretty ligit. It actually tastes like your favorite cheeseburger, but it is much lighter and healthier.
The secret to this cheeseburger casserole? The caramelized onions.
I am sorry if these pictures are lacking. I literally snapped these pictures in 2 minutes during dusk, as I was running around crazy, trying to get my son ready for soccer. I still felt the need to post this recipe, it just tasted soooo good!
I love making quinoa in my rice cooker. You can literally just throw your quinoa in the rice cooker, then leave the house or do whatever. Most quinoa packages will tell you to cook 1 cup of quinoa with 2 cups of water. Add 3 cups of water. trust me. It will turn out soooo much fluffier.
Quinoa Cheeseburger Casserole –Serves 4-8
2 cups of quinoa
6 cups of water
1 small onion
1 lb of ground beef
1 can of diced tomatoes
6 slices of cheddar cheese- or any cheese of your choosing
condiments! – ketchup, mustard pickles etc.
Method: Cook quinoa in water. Caramelize onion in a skillet. Add tomatoes to the onions and set aside. cook ground beef, drain and add the ground beef to the tomato and onion mixture. Add quinoa to the mixture as well. Build your casserole. put 1/2 of the quinoa mixture in the casserole dish. add 3 slices of cheese. place the second 1/2 of the quinoa mixture in the casserole dish and add three more slices of cheese. bake at 350 for 25 minutes. Remove from oven and add your favorite cheeseburger condiments.
