I can’t believe that Christmas is only a few weeks away. I love Christmas. The friends, the family and the food! The food!
Every year on Christmas eve, my mom makes the most amazing appetizers! My favorite Christmas memories revolve around spending time with my loved ones on Christmas Eve over drinks and delicious appetizers with Christmas music playing.
When Mezzetta Olives asked me to come up with a holiday-inspired dish using their olives, I knew that I wanted to make an appetizer, a healthy dip.
I happen to love green olives. After successfully making a sweet ricotta dip last week, I decided to make a savory one. I added a few of my favorite ingredients to make this dip killer.
Greek Yogurt.
Parmesan Cheese.
Ricotta Cheese.
Lemon.
Yummy.
I made this Green Olive and Ricotta Baked Dip in these teeny casserole dishes I found at Pier One. You could also make this dip in a small casserole dish as well.
Baked Green Olive Ricotta Dip –Serves 4-6
Ingredients
1 heaping tablespoon of plain greek yogurt
8 ounces of Ricotta Cheese
juice of 1/2 a lemon
1/3 cup of Parmesan Cheese
8-10 Mezzetta Green Olives.
Method: In a food processor, mix all the ingredients together except the olives. Pit the olives and add them to the food processor and pulse- just a little bit. Place the mixture in a baking dish and bake for about 20 minutes. remove when it starts to bubble and serve
This dip was wonderfully delicious. What an easy appetizer!
