I made this amazing and healthy dinner using Ragu Pasta Sauce.
It took me a long time to get on the quinoa wagon. Once I started cooking quinoa in my rice cooker, I started loving it. I think that it’s important to use enough water when cooking quinoa. I add 2 cups of water for every cup of quinoa.
Quinoa is much lighter than pasta. Its filling, and you can cook quinoa with any flavor you like. I make this quick Italian quinoa skillet meal using Ragu Pasta Sauce. I used to eat Ragu all the time when I was in college, and I love this lower sugar option that they offer.
I added all my favorite Italian flavors to this meal. Spinach, prosciutto, basil, parmesan cheese, garlic and mozzarella cheese. You can add whatever flavors you like this dish.
Italian Quinoa Skillet Meal
2 cups of quinoa
4 cups water
1 jar of Ragu
1 cup of mozzarella cheese
1 cup of prosciutto
1 cup of chopped spinach
1 teaspoon minced garlic
1 teaspoon of dried basil
Method: Cook Quinoa by placing quinoa and water into a rice cooker of or a pot. Add cooked quinoa to a skillet with pasta sauce, prosciutto, cheese, spinach, garlic and basil. You can add any Italian flavors you like. Turn on heat and mix all the flavors together for 10 minutes. Turn off heat and serve the meal.
This was an excellent meal. I will be using Quinoa in an Italian application again. I love this Ragu sauce.
