A few weeks ago, I made Flourless Pumpkin Oatmeal Raisin Cookies. They turned out so good, that I wanted to try another flavor.
These cookies have no oil, no added sugar and no flour. These can be made gluten-free if you use gluten-free oats.
Here are some great reasons why Oatmeal is a great ingredient to add to “Flourless Cookies”
1) You can buy gluten-free oats
2) Gluten-Free Oats or regular oats are not as expensive as other flour alternatives.
3) Oatmeal gives flourless cookees more substance
4) Oatmeal Cookies just taste good.
These Cookies have no oil, no flour and no added sugar. It’s not always necessary to add oil to flourless cookies, because they contain enough moisture already. These cookies are sweetened with dates. That is where the caramel flavor comes from.
I usually cook flourless cookies for 25-30 minutes, longer than “Regular” cookies. Flourless cookies call for a lot of moist ingredients. My guess is that you can omit the egg if you are vegan. Also, for added flavor, I think that a scoop full of nut butter would taste really good.
Flourless Caramel Apple Oatmeal Cookies
Ingredients
1 apple chopped into small cubes
5 pitted dates, soaked in water overnight
1 egg
1 cup of oats, not instant oats
1 teaspoon cinnamon
1 teaspoon baking powder
dash of salt
Method: Preheat oven to 350 degrees. In your food processor or mixer, mix together all the ingredients. Use a cookie scoop and make 1 inch balls. press down the balls with a fork. Bake the cookies for 20-25 minutes, or until the outsides get slightly crisp. remove from the oven and eat.
My kids loved these. I don’t know why I don’t break out dates more often. I will be making these again soon.

What can I use instead of dates? Maybe raisins?
Made these cookies and added one ripe banana, I teas. Vanilla and two handfuls of broken walnuts. They are great! Will make another batch tomorrow for gifts!

Found this on pinterest. Looks awesome. I haven’t ever cooked/baked with dates before…. but I am always “sneaking” healthier stuff into my family’s diet. Its just what I do in my own constant battle to stay healthy. Can’t wait to try this – won’t wait until fall 😉

What can I use instead of dates I didn’t realize the recipe called for them, I do have little Carmel balls for cooking ? Can I use those instead?
Or does the dates help everything stick together?
