Its all things pumpkin people.   What can I say?  I love it.

Here are some healthy ( okay, fine maybe just “healthier” Oreos)

These are not cookies you can just whip up.   You do need to take a few steps to make these, but they’re delicious.  These are made with whole wheat flour and sweetened with only maple syrup. ( Okay fine.  The COOKIES are sweetened with only maple syrup. The filling is good ole sugar :))

I added A LOT of cocoa to these cookies.  The more chocolate, the better.

I might of added a little more sugar to the filling than what my taste allows.  I might need to amend the filling to the formula a bit.  Maybe add more pumpkin.

Healthy Pumpkin Oreos 

Chocolate Cookie Recipe 

Ingredients 

1/2 cup of cocoa

1/3 cup of maple syrup

1 cup of whole wheat flour

2 tablespoons of coconut oil

1 teaspoon of baking powder

1 teaspoon of pure vanilla extract

1/2 teaspoon of salt

1 teaspoon of pumpkin pie seasoning

Pumpkin Cream Filling 

1/4 cup of coconut oil OR butter

1/2 cup of powdered sugar

1/4 cup of pumpkin puree

1/4 teaspoon of pumpkin pie seasoning

1 teaspoon of pure vanilla extract

Method:  Mix all of the cookie ingredients together in a mixer or food processor.  Cool the cookie dough in the fridge for 30 minutes.   Roll out the dough and use cookie cutters to cut out your cookies.  Bake in the oven at 350 degrees for 10-12 minutes.    In another bowl, melt coconut oil or soften butter.  add powdered sugar, pumpkin and seasonings.  Mix until you get the desired cream filling consistency.   When your cookies have cooled, spread the cream filling onto them and sandwich them up!

I though that this cream filling was almost a little too sugary for me.  but my kids pretty much gobbled these up in no time.  I might try to play around with the cream filling a little bit.  Make it more savory.  Would it still be considered an “Oreo” if I did this?  Who knows 🙂
