Banana Bread Hummus

Before you click the X on the right hand of your screen, I have to tell you.  It’s delicious!

Over the weekend, I made this cucumber dill hummus for my friend’s wedding shower.  I then was showing my mom all of the excellent flavors of hummus on Pinterest.    When we were driving home yesterday, and I started thinking up new hummus flavors.

I figured that this sweet hummus would taste good.  Last year, I made Peanut Butter Hummus that turned out wonderfully.

I used many of the same ingredients that I used in my Flourless Banana Bread.

Walnuts

Bananas

Vanilla and Cinnamon.

This hummus tasted exactly like banana bread but only took five minutes to prepare.

Also, instead of using olive oil, like in regular hummus.  I used coconut oil to make it creamy.

And what do you dip in banana bread hummus?

Graham Crackers

Apple Slices

Pretzels

Animal Crackers.

I dipped teeny gingersnap cookies.

Banana Bread Hummus 

Ingredients 

One can of chickpeas, rinsed and drained

Two tablespoons of coconut oil

Two semi-ripe bananas

3/4 cup of walnuts

One teaspoon of cinnamon

One teaspoon of no alcohol vanilla  ( trader joes)

Method:  Blend all of the ingredients in a food processor and serve.   If it isn’t creamy enough for you, you might want to add more coconut oil

This hummus turned out great.  Kids loved it.  I will be making this again when I want banana bread and don’t feel like baking.

Can I substitute olive oil instead of coconut oil

Olive oil might give you a really different taste. I would suggest canola or vegetable oil before olive

Why non-alcohol vanilla? Does alcohol react to the beans? Can’t wait to try this I bet it is delicious

non-alcohol vanilla was just my personal preference because I was feeding this to small children. Any vanilla will work fine 🙂

I can’t have walnuts. Are they necessary for the texture or can they be left out? If they are necessary, any non-nIt suggestions?

You could try without it. Although it may not quite seem like a ” bread”. Are there any other nuts you can have?
