Kale Breadcrumb Chicken Tenders

I hid some Kale in my boys’ chicken tenders last night.  All three of them ( 2 toddler boys and their dad) gobbled these up.  Including dehydrated kale in homemade breadcrumbs has been on my ” list of recipes to make” for well over a year.  I was scared that these would turn out “weird”.  They actually turned out delicious.

I bet you could replace this dehydrated kale with any dehydrated veggie.  I happened to have some kale in my fridge that needed to be used pronto.  Dehydrated swiss chard or spinach would also work very well for this application.

If you don’t have a dehydrator, that is okay.  Just follow any “Kale Chip” recipe where you bake pieces of kale in the oven.  The point is, is to be able to get that kale baked enough to where it’s crunchy, and will crumble up.  You could probably use this dehydrated kale in all sorts of vegetable hiding for your kiddos.

You might think that my breadcrumbs look a little dark.  That is because I used pumpernickel bread to make homemade breadcrumbs.  I like the flavor of pumpernickel bread, plus it has a lower glycemic index than regular white or wheat bread.   Use the kind of bread you have around the house.

Homemade Kale Breadcrumbs 

Ingredients 

8-10 Kale leaves

6-8 slices of stale or toasted bread

salt or other seasonings are optional

Method: Place your kale leaves in your dehydrator until they are totally dried.  Crumble the kale up and put it in a jar.  I did this by simply smashing the kale into a mason jar with a spoon.   Set Kale aside.  In your food processor, pulverize 6-8 slices of toasted or stale bread.  Spread out the breadcrumbs on a baking sheet, add seasoning if desired, and bake at 350 degrees for 10-15 minutes.  Take the breadcrumbs out of the oven and let cool.   Once cooled, put the breadcrumbs back in your food processor with the dehydrated kale.  pulse a few times to mix.   Put your breadcrumbs to good use.  🙂

This actually worked out great for me.  I was a little worried that my kids wouldn’t eat the chicken I made with them, because you could still see the “green”.  But you could hardly taste the kale.

Try to use the kale breadcrumbs carefully.  If you have to throw any breadcrumbs away, it would be a shame.  You would be wasting lots of good nutrition here.
