40 Calorie Pumpkin Cookies

So actually these cookies are probably less than 40 calories each.   I just wanted to give you some leeway.  Just in case you want to add a little more sweetener or another chocolate chip.

How did I calculate the calories in each cookie?  I plugged the ingredients into this recipe calorie calculator.

These pumpkin cookies are perfect for fall.  They’re gluten-free, oil-free, nut-free and vegan.  They’re also delicious.  My three-year-old literally sat there and ate the whole plate of them and kept saying ” Wow, these are so good!” ( I am not kidding)

You see, I am a former pumpkin spice latte lover.  Why a former?  Well, I stopped getting those sugary lattes from Starbucks.  And those few times when I wanted to treat myself, they were too sugary for me to even finish.  ( Yes, I would bring the latte home and mix it with black coffee. sad)

I bought a package of coconut flour this summer.  I have found that it makes really good low-calorie cookies.  I love it because it is sweet.  I have used coconut flour in my Peanut Butter Cookie Dough Bites and in the nougat that fills my Snickers Stuffed Dates.

40 Calorie Pumpkin Cookies  Yields 12 cookies

Ingredients 

2 tablespoons of coconut flour

3 tablespoons of canned pumpkin

1/4 cup of maple syrup

1 teaspoon of cinnamon

1 teaspoon of pure vanilla extract

3 tablespoons of unsweetened coconut milk

a pinch of salt

1/4 teaspoon of baking powder

12 chocolate chips

Method:  Preheat oven to 350 degrees.  In a bowl, mix all the ingredients together.  using a cookie scoop make 12 balls on a baking sheet.  Press down the balls with a fork, and add a chocolate chip onto each cookie.  Bake in the oven for 20 minutes.   You will want to make sure that the cookies are cooled before eating.

These turned out better than expected.  Not bad for pulling random ingredients out of my pantry this afternoon.

I made these and I noticed that I had to wait a few minutes for the coconut flour to absorb the liquid, I dropped them onto the pan using a tablespoon instead of forming balls. I was still able to flatten them with a fork – carefully – to get the same effect. I did find that these are a soft cookie rather than a crispy one. I also found them to be very ‘dry’ in that they kept sticking to the back of my throat. I needed to bump up the flavour by doubling the spices.
question: could you make these with stevia?

Carol- Yes. Coconut flour really absorbs liquid. I am glad you were able to make them with the flavors you prefer. I think you could probably add any sweetener you like!

This was A lovely, simple recipe. I would just advise others that chocolate chips are not vegan unless you buy Specific ONES that are. My scatter brain of course forgot about that until the end.

Hi, I AM TRYING TO MAKE these today and when i scooped them out and onto my cookie sheet they were not balls because the consistency was too liquidy. I followed the ingredients exactly and am not sure why my batter was not hard enough to make a ball/push with the fork.

should more flour be added?

mmm not sure what would have happened. but yes, if they are too liquidy- add some more flour. Be careful though- this flour does absorb a lot of liquid.

I was wondering the same thing.. My dough is super soupy! I added a bit more flour.. And it only made 6 cookies! They are in the oven now and smell amazing 🙂

I think the recipe is off, I tried making them and followed the recipe to the letter and it was like water, ended up adding a bunch more coconut flour to make it thicker. I will say the flavor was good but still could have used more flour….

I also added a ton more flour. I think I did about four times the recipe with the flour and it was probably close, but maybe could have used a little more. So I wonder if it was supposed to be cups instead of Tablespoons.

Hi, I am trying to make these but had an issue with the flour also. when you added a little extra flour did you also add anymore pumpkin/syrup or anything to keep taste strong? i feel like mine is too cakey/less tasty with more flour .

carton milk. like silk coconut milk You can use any other milk, but it just wont be dairy-free or nut-free etc.

I would love to try making these. I am supposed to be on a low calorie, high fiber diet. I would cry if I see another salad in my life. These pumpkin cookies are the answer! Thanks for sharing.
