There is nothing quite like cold and creamy vanilla ice cream with fruit on a hot summer day. Sure, I love all ice cream flavors. But, to me, nothing says summer like plain vanilla. Nothing can be more refreshing or sweeter.

My choice of Ice Cream is always Blue Bunny. You see, I live in Iowa, the state where Blue Bunny is located. 10 years ago, before my husband and I were married, I visited his parent’s acreage for the first time. During that visit, my mother-in-law served vanilla Blue Bunny Ice Cream with fresh peaches for dessert. My mother-in-law claims that Bunny Wells, granddaughter of one of the owners, was her high-school Spanish teacher in Kingsley, Iowa. I have always kept buying Blue Bunny, because I loved hearing about that supposed connection. I also love it because it’s classic and simple.

I took a trip to my local Wal-Mart to purchase my Blue Bunny Ice Cream for a special dessert I was planning for my family. Check all the fun Blue Bunny Products at Walmart Here. ( I also love the Mini Cones)

Blue Bunny was easy to find at my store. There was a huge display with a lot of fun flavors.

I have always thought that grilled peaches tasted amazing. I decided to switch them up a bit by adding a maple-vanilla glaze to them before grilling them. This maple-vanilla mixture caramelized onto the peaches, and they smelled amazing when they were all cooked, like vanilla.

Maple-Vanilla Grilled Peaches Over Ice Cream
Ingredients
3-4 peaches, cut into slices
2 teaspoons of pure vanilla extract
1/3 cup of maple syrup.

Method
In a small bowl, mix vanilla extract and maple syrup. Using a pastry brush, brush the mixture on each peach slice. Grill each peach slice for about 10 minutes, flipping the peach over 1/2 way though. Remove peaches from the grill and serve over Vanilla Ice Cream.

These grilled peaches actually turned out better than expected. After grilling these peaches, I am now in a “grilling fruit mood”. I would like to try more grilled fruit this summer over Blue Bunny Vanilla Ice Cream. Maybe I should try pineapple next.
