Blueberry-Lemon Cheesecake Smoothie

I have been meaning to make a smoothie using Silk Vanilla Cashew Milk for quite some time. You see, I love making smoothies that taste like dessert. Plus, I have learned this fun trick of using raw cashews in your smoothies in order for them to taste like CHEESECAKE!

It actually makes sense to use cashew milk when making a smoothie that contains raw cashews. Doesn’t it?

I actually love all of Silk’s products. I drank their soy milk when I was in college, and have used their almond milks and coconut milks in smoothies for years. I made this Blueberry Lemon Cheesecake Smoothie for my boys during an afternoon last week. I loved adding #cashewvanilla to this smoothie because the vanilla flavor gave this smoothie the perfect vanilla touch, to make it taste like cheesecake.

I also love adding lemon to my smoothies, citrus really adds depth to any smoothie.


Blueberry-Lemon Cheesecake Smoothie ( serves 2-4)


2 frozen bananas
1 cup of blueberries- frozen or fresh
1/3 cup of raw cashews- that were soaked in water for 20-60 minutes
juice and zest of 1 lemon
1 cup of Silk Vanilla Cashew Milk

In your blender, Mix all of the ingredients until they achieve a smoothie-like texture. Add more milk if you need to.


This smoothie was extremely tasty. If you have not included raw cashews in your smoothies, then you must! Raw cashews will make your fruit smoothies taste like cheesecake! I am sure that any fruit you like would be perfect with the cashew and cashew milk smoothie combo!
