I often share flourless recipes on this blog. These flourless peanut butter chocolate coconut cookies are really tasty. I think that the coconut adds some much needed texture to the cookies. I also used coco powder and naturally sweetened these with maple syrup. They’re mostly healthy and my kids gobbled them up!
This recipe was really easy. I just mixed the dough in my ninja food processor and baked them right up.
Flourless Peanut Butter Chocolate Coconut Cookies ( Yields 15 Cookies)
Ingredients
1 cup of all natural peanut butter
1 egg
1/2 cup of maple syrup- or another sweetener
1 teaspoon of pure vanilla extract
1 heaping tablespoon of coco powder
1/3 cup of unsweetened coconut flakes
Method: Mix all of the ingredients together in your food processor or mixer. Using a cookie scoop, create 1 inch balls on a baking sheet. Using a fork, flatten each cookie. Bake at 350 degrees for 10 minutes. Let cool and eat.
