Flourless Peanut Butter Chocolate Coconut Cookies

I think it’s time for a #PeanutButterBash

Yes.  I have gotten together with some other amazing food bloggers today, to share with you a Peanut Butter recipe that features coconut.   The coolest part?  all of these other bloggers are also sharing a Peanut Butter recipe that features coconut.   How fun is that?  If you are a food blogger, and would like to join the Peanut Butter Bash next month, please join our facebook group

I often share flourless recipes on this blog.  These flourless peanut butter chocolate coconut cookies are really tasty.  I think that the coconut adds some much needed texture to the cookies.  I also used coco powder and naturally sweetened these with maple syrup.  They’re mostly healthy and my kids gobbled them up!

This recipe was really easy.  I just mixed the dough in my ninja food processor and baked them right up.

Flourless Peanut Butter Chocolate Coconut Cookies  ( Yields 15 Cookies)

1 cup of all natural peanut butter

1 egg

1/2 cup of maple syrup- or another sweetener

1 teaspoon of pure vanilla extract

1 heaping tablespoon of coco powder

1/3 cup of unsweetened coconut flakes

Method: Mix all of the ingredients together in your food processor or mixer.  Using a cookie scoop, create 1 inch balls on a baking sheet.  Using a fork, flatten each cookie.  Bake at 350 degrees for 10 minutes. Let cool and eat.

  1. These look so easy to make and I love that they’re gluten free! I can’t wait to make them 🙂

  2. It doesn’t get much better than chocolate and peanut butter. Definitely making these for the kids.
