I reach for frozen vegetables. A lot.
I know, that it is ” food bloggish” to use all fresh, organic vegetables from the farmers market. But let’s be real here for a minute, because that doesn’t happen in my house every day.
My kids usually don’t have a problem eating frozen mixed vegetables. frozen peas or frozen corn. No, it’s not Kale. But my kids are healthy, and they love their frozen vegetables.
Sometimes, my husband and I like to add more flavor to our frozen veggies.
This week, I tried roasting frozen corn with sriracha sauce. We served the regular corn to the kiddos, while Greg and I enjoyed this spiced up version.
I love this Iowa Choice Harvest frozen Corn. It’s so sweet!
Roasting this frozen corn couldn’t be easier. I added a little maple syrup to this corn because I was a little scared that the sriracha would be too hot. I think that I will skip the maple syrup next time though.
Sriracha Roasted Corn
1 package of frozen corn
2 tablespoons of Sriracha Sauce – or as much as you would prefer.
1 teaspoon of maple syrup. ( optional)
Method: Place the frozen corn on a baking sheet. toss with Siriracha sauce and maple syrup. Broil in the oven for 6-10 minutes. Take out and enjoy.
