Healthy Almond Joy Popcorn

I don’t usually post recipes so close together.  But with my computer being in the shop this week, I have had some extra time to cook.  I wanted to get this recipe in before the weekend.

A couple of months ago, I made Healthy Almond Joy Soft Serve.   This recipe was so good, that I decided to use the Almond Joy theme in another application.  Popcorn!

The best thing about all of the almond joy flavors, is that they are healthy!   I used mini chocolate chips in this recipe.  If you wanted to make this popcorn lower calorie, then I would suggest using cocoa powder, or super dark chocolate to reduce the sugar in this snack.   Also, if you want to keep this popcorn healthy, be sure to use unsweetened coconut flakes.  Sweetened coconut flakes would also add a lot of sugar to this snack.

If you want an extra almond joy flavor, then you should pop your popcorn in coconut oil!

This recipe really couldn’t be any easier.  It is a healthy way for your sweet tooth to get it’s fix, and its not all that bad for you.  You can put as little or as much of these toppings on your popcorn as you like.

My kids both loved this afternoon snack.  Um,  because popcorn with melted chocolate on top is good 🙂  This was actually a fun recipe to make with my three year old.

Almond Joy Baked Popcorn 

Ingredients  

5 cups of popped popcorn

1/3 cup of slivered almonds

1/3 cup of mini chocolate chips ( or chocolate of your choice)

1/4 cup of unsweetened coconut flakes

1 tablespoon of maple syrup

1 teaspoon sea salt.

Method: On a baking sheet lined with parchment paper, spread out popped popcorn.  Sprinkle chocolate chips, coconut and slivered almonds.  Mix well.  drizzle maple syrup on top and salt.  Bake at 350 for 10 minutes.  Remove from oven and serve.

I will be making this again, we snacked on this for w few days.  I need to think up some more flavors.
