Cheese, bacon and kale quinoa Cups

These little cheese, bacon and kale quinoa cups were delightful to eat.  They’re also probably the most “hipster” recipe that I have ever posted.  If you know any hipsters, then you know they love their kale, bacon and quinoa. 🙂

I was asked to participate in Sargento® Chopped Series.   This was really exciting, as Chopped is one of my favorite shows.

I was asked to make a recipe, chopped style, using the following ingredients.

Sargento Four state cheddar shredded cheese

Kale

Oyster crackers

Bacon

I actually don’t know how great I would actually do on the real show chopped.  It actually took me a while to come up with this recipe, plus it took me over 30 minutes to make.  oops.

But you know what? I loved these, and this 4 state cheddar cheese was full of flavor!  Sharp Wisconsin Cheddar, Sharp Vermont Cheddar, Sharp New York Cheddar and Mild California Cheddar cheeses come together to offer true Cheddar enthusiasts a complex, full range of delicious flavor.  I had to pick out each kind and try all of the flavors individually.  This is a very good mixture

Cheese, Bacon and Kale Quinoa Cups – Yields 12 large quinoa muffins

Ingredients 

2 cups of cooled cooked quinoa

3 eggs

1 package of Sargento 4 state cheddar

1 cup of cooked chopped bacon

1 cup of chopped cooked kale

1/2 cup of chopped oyster crackers

Method: In a bowl, mix together quinoa, bacon and cooked kale.  Add in eggs and cheese.  Mix and put into silicone baking cups.  You can also mold this mixture into patties if you don’t have baking cups.   Bake in the oven for 25 minutes at 350 degrees.  

You will want to make sure that the quinoa is cooled, so the eggs don’t cook when you ad them.  I cooked the kale down over the stove in a tablespoon of olive oil.

These cups were delicious!  Every flavor I love!  Cheese, Bacon and that intense flavor of cooked down kale. Which I happen to love.  These are gluten-free and really tasty.  my kids, husband and I enjoyed them for lunch last weekend.
