Strawberry-Cheesecake Banana Soft Serve

I know. 

Another Banana Ice Cream Recipe.  I just can’t help myself.  My 3-year-old is always asking for Banana Ice Cream.  So I am always freezing bananas and trying out new recipes for the kids.  I have a few others I want to try, so stay tuned. 🙂

Do you know what makes this banana soft serve taste like cheesecake?  I added a tablespoon of my Cheesecake butter.  The cheesecake butter made this delicious!  Don’t have any Cheesecake Butter sitting around?  don’t worry, I have written in the recipe below what to add in place of this.

Both of my kids are skinny.  My second son is only in the 4th % for weight for his age, and his doctor has advised me to give him lots of whole milk and lots of healthy calories.  When I made this for my kids, I used whole milk, but when I made this for me, I used almond milk.  ( cashew milk would also be appropriate, although I have not tried it yet)

Strawberry-Cheesecake Banana Soft Serve
Prep time:
Cook time:
Total time:
Serves: 2-4
Ingredients
  • 2 frozen bananas
  • 1 cup of frozen strawberries
  • 1 tablespoon of cashew butter OR 1/2 teaspoon lemon juice, 1 teaspoon of vanilla ( extract or ground) and 1/4 cup of soaked cashews ( for at least an hour)
  • 1/4 cup of milk ( milk of your choice)
Instructions
  1. Add all ingredients into a blender and blend. If your soft serve seems too much like a milkshake, add more frozen fruit.

This looks so good! However I do have a question for you. Is there something that could be used instead of cashews? (allergic to them) If so, I would love to try this!

I would use soaked almonds. If you are allergic to all nuts, I would just use lemon juice, and a nice amount of vanilla to get the effect. I guess you could add some Nilla Wafers for texture- although not the healthiest. 🙂

Oh gosh this looks like a great pick-me-up this summer season here in the Philippines. I would love to have it as a snack, breakfast, or dessert!

We’ve been making banana ice cream for a few years now. I always make sure to buy extra bananas knowing I will freeze some. They either go in smoothies or we make ice cream. We’ve tried a few variations of flavor over the years. We’ll have to try cheese cake next.
