Cheesy Quinoa “Breadsticks”

At first I thought quinoa was a trend.   Now I see that it’s the trend that doesn’t seem to be going away.   For a LONG time I didn’t like quinoa all that much.  I was just kind of waiting for something else to come along.  But lately, I have been making it, and doing a little experimenting with it.  I have actually started enjoying it too.

last week I had some cold quinoa in my fridge, and I used it in a “throw it together” dinner.  ( I made cheesy quinoa cakes with leftover chicken and random vegetables).  My husband and kids loved these quinoa cakes, and while eating them, I came up with the idea for these pizza flavored cheesy sticks.

I made these and served them to my kids for lunch.  They were a HUGE hit!

Cheesy Quinoa “Breadsticks”
Prep time:
Cook time:
Total time:
Serves: 8-10
Ingredients
  • 1 1/2 cups of cold cooked quinoa
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of shredded parmesan cheese
  • 2 cloves of minced garlic
  • 2 teaspoons of Italian seasoning
  • 2 eggs
Instructions
  1. Mix all of the ingredients in a bowl
  2. Using a cookie scoop, make “breadstick” like shapes with the quinoa mixture on a baking sheet, lined with parchment paper.
  3. Bake in the oven at 400 degrees for 20 minutes. flip each breadstick half way through the cooking process.
  4. remove from the oven and let cool
  5. serve with marinara sauce

I will be making these again soon!  I might also consider switching up the flavors!

  1. This is so great! I’ve recently been trying to eat healthier and eat less gluten. Right now my diet is made up of mainly carbs and that needs to change. I’d love to try making breadsticks out of quinoa!

     
  2. I am definitely trying this recipe (thanks for sharing). I have no idea that quinoa is such a versatile ingredient. I have seen a few recipes already so I will give this a try!

     
  3. We also did not like quinoa but when we learned how healthy it is, we knew we must grab it at least once a week for breakfast or snack. Leftover food tastes good as the flavor sinks in more. It’s creative of you to come up with the idea to make pizza flavored cheesy sticks! No wonder your kids love them!

     
  4. YUMMY! I love quinoa but my kids not so much so I am going to definitely try this recipe since they love breaksticks. Quinoa is really popular but I don’t think it will just be a trend as many people have changed their lifestyle to be healthier. I don;t see the super conscious going back to white flour and rice.
