A few weeks ago, I posted Hawaiian Pizza Chicken. It was such an amazing dinner, that I decided to try another one of my favorite pizzas on top of a piece of chicken. After Hawaiian pizza, my second favorite kind of pizza is Barbecue Chicken. I used to eat Barbecue pizza when I visited my grandparent’s house when I was little. I smothered this chicken in homemade barbecue sauce. I found the most amazing barbecue sauce recipe over at The Sustainable Couple. Please click over to see the recipe.
I pounded the chicken flat before smothering it with Kelli’s Barbecue Sauce. I also topped this pizza with caramelized onions. I think that adding bacon bits or pineapple would be wonderful too. When my parents order Barbecue chicken in the Chicago suburbs, it always comes with bacon bits.
- 2 lbs of chicken beast, cut into tenderloins
- 2 cups of The Sustainable Couple’s BBQ Sauce
- 2 onions, caramelized
- fresh mozzarella cheese
- optional – bacon bits or pineapple
- Cut your chicken to your desired size. Pound each piece of chicken flat. Smother the chicken with a generous amount of BBQ Sauce. Bake in the oven on a baking sheet for 30 minutes at 350. take chicken out and add the pizza toppings and cook for another 10 minutes. When the cheese has melted, take the chicken out.
This pizza chicken was seriously good. Kelli’s Barbecue Sauce was seriously delish. I think that the chili powder she adds to this recipe really gives it the perfect amount of spice.
