14 Low-Carb Mexican Food Solutions



Here I am doing another round-up!  I don’t post these food round-ups often, but when I do, it’s usually because I am feeling inspired.  I love Mexican food.  It can be made really healthy by adding lots of vegetables and reducing the amount of cheese used.   Sometimes though, I look at the calories on the flour and corn tortillas package.  ( 1 tortilla is usually 150 calories each!)

  1. It never occurred to me to stuff taco meat and stuff in an avocado. It sounds delicious, though. Mexican food is so delicious, so I don’t mind experimenting with the traditional recipes like this. I wonder if it would work with peppers, too. There’s only one way to find out!

  2. Thank you for sharing some of these ideas! I have the unenviable position of wanting to eat a lower carb diet, while at the same time loving Mexican food. I’ve been looking for some decent options that meet both requirements, and this is the first list I’ve seen that I’m actually excited to try!
