How would you define a ” Heart Healthy” lifestyle? For me, it’s eating healthy, and maintaining a consistent running routine. As most of you know, I started doubling healthy recipes and keeping the recipes in my freezer for quick and healthy lunch and dinners. This is great because I hardly ever eat out anymore.
The other aspect of my ” Heart Healthy” lifestyle is running. I ran cross-country when i was younger, and I have always kept running a part of my life. Right now, I am training for a 5k that I will run in April with my good friend, Karen.
Karen, is also the mom to two small children. We are busy, and we are both trying to get back into shape. We decided a few weeks ago, that we would run a race together this April. We have been keeping each other in check, by sending each other e-mails a few days a week, discussing how much we ran, how fast, and the challenges we have faced. Let me tell you, if you want to get back in to shape, there’s nothing quite like, positive peer pressure from a best friend. 🙂
We have discussed eating habits, how to fit a work out in when the kiddos are sick, to what kind of running clothes are the most comfortable. I know, that if we keep this up, our results are going to be amazing.
Nowadays, I feel like companies are doing a great job, coming out with more health conscious products to satisfy consumer demand, and Campbell’s Soup is one of them.

My Chicken and Zucchini Quinoa Bake is comfort food, packed with healthy ingredients. It is also Gluten-Free and Grain-Free. Quinoa is not actually a grain, it’s a seed. I also used two whole zucchini, and leftover baked chicken in this recipe. This dinner turned out wonderfully, and I currently have leftover, lunch sized portions in my fridge for next week.
- 3 cups of cooked Quinoa
- 1 can of Campbell’s® Healthy Request® Condensed Cream of Mushroom Soup
- 2 cups of shredded chicken, OR 2 chicken breasts, cooked and chopped.
- 1 carrot
- 2 zucchini
- 1 small onion
- 1 cup cheese
- 1 cup milk
- Preheat oven to 350 degrees.
- In a Saucepan, saute onion, chopped carrot, and shredded zucchini, until they become transparent. Add the Campbell’s® Healthy Request® Condensed Cream of Mushroom Soup and 1 cup of milk and stir until the mixture is boiling.
- In a 9 by 13 baking dish, Mix the quinoa with the soup mixture.
- Top casserole with shredded chicken and cheese
- Bake in the oven for 20-15 minutes- or until the cheese has melted to your preference.
Heart disease is the leading cause of death in women in the United States, so it’s never been more important to start a “Heart Healthy” lifestyle. Campbell has a whole list of delicious looking, heart-healthy recipes on their website. Most of their dinner recipes are also easy for any mom on the go.
