Happy New Year!
Am I the only one Freaking out just a little that it’s 2015? Seriously, time is going by too fast, and I hate it! For New Years, my family and I went to a get-together with our college friends, and now we have been friends with most of these couples for ten plus years, and I can’t believe it.
But maybe I should sit back and Make The Best of Everything for a minute. I CAN’T control how old I am getting or how time is flying by WAY TOO FAST ( I just turned 32 last week). But I CAN control to take care of myself and to eat healthily so I can live life to the fullest!
This THREE ingredient blender ice cream has no added sugar and is vegan. ( although you can add some yogurt or a little milk if you like) It also tastes terrific. Best part? My kids love it!
- 2 Frozen Bananas
- 1/2 Lemon- juice and zest
- One tablespoon vanilla extract
- optional one tablespoon of milk OR 1 tablespoon of plain yogurt ( this will add creaminess)
- The night before, place unpeeled bananas in a freezer bag and freeze the bananas overnight. Place frozen bananas, lemon juice, lemon zest, and vanilla extract in your blender. Blend your mixture until you get an ice cream-like texture. You may have to stop your blender a few times to “scrape the sides” of the mixer or to stir the mixture a bit
I hope this wonderfully healthy dessert helps you keep your New Years Resolutions! I think the more lemon zest you add, the better this recipe tastes! Now, I want warm weather to eat this ice cream. ( it’s been about 10 degrees, here in northern Iowa)
