DIY Gluten-Free Chicken Nuggets

I am realizing that you can freeze almost any food.  It’s almost become a motto of mine.  ( I talk about freezer meals enough, that I think it annoys my friends just a little)  But seriously, making large batches of food and freezing meals is SUCH a time saver,  I can’t even reiterate it enough.

My favorite freezer meals?  Nothing fancy.  Taco meat.  ( I make HUGE batches of taco meat in the crock pot. And I always keep taco shells handy)  and my DIY Freezer Friendly Chicken Nuggets, which never last as long as they should.

I get a lot of e-mails about my DIY freezer chicken Nuggets.   They have blown up on Pinterest a bit and have become one of my most popular posts. I have had many requests on how to make Gluten-Free Freezer chicken nuggets.  So here we go.

Please note.  I am not Gluten-Free.  I am no expert on rice flour, almond flour and the rest.  I am sure their are plenty of other ways to make gluten-free nuggets.  Potato chips, Sweet Potato chips, cornmeal or rice chex could also be used for the breading agent.

I used Rice Cereal as my breading agent for these nuggets.  Rice Cereal can be easily crushed into “Breadcrumbs”.  This cereal is one of my favorites.  There is just something about the taste-  I just love.

In order to make chicken nuggets, you need to create a dipping station.  In one bowl, Mix together eggs and Milk.  In a second bowl, mix the crushed cereal with seasoning.  I like this salt and pepper seasoning,  but you can use any seasoning you want.  Paprika is also great seasoning to use for this.

Let each piece of chicken soak in the egg, then coat each nugget in the cereal.

Make sure your nuggets have cooled before you pack them away in a freezer bag and throw them in the freezer.  Putting hot food into a freezer can contaminate it.

ALWAYS use fresh chicken when you make DIY freezer chicken nuggets.  re freezing already frozen chicken is not a good idea.

I find that the best way to re-heat the frozen nuggets is in the microwave.   Otherwise they turn out too dry.  ( faster too)

DIY Gluten-Free Chicken Nuggets
Ingredients
  • 5 lbs of boneless-skinless chicken breasts
  • 1/2 box of crispy rice cereal
  • 5-6 eggs
  • 1/4 cup of milk
  • your favorite seasoning
Instructions
  1. Pre heat oven to 350
  2. Cut chicken into nugget sized pieces
  3. In a bowl #1 , mix eggs and milk
  4. In bowl #2, mix crushed cereal and seasoning.
  5. Dip each piece of chicken in egg mixture, followed by cereal mixture.
  6. Bake the chicken for 20-25 minutes.
  7. If freezing, let it cool entirely before placing in freezer.

  2. Great IDEA! unfortunately, the cereal has barley malt so isn’t gf…just sub another gf cereal or cracker 👍
