Healthy Pumpkin Soft Serve

My Two-year old still believes everything that I say.

So when I tell him that his Aunt Celia, who lives in Chicago, will clap for him from afar if he eats his vegetables.  He believes that.

PLUS, when I tell him in the morning, that I am going to make him ice cream for breakfast, he doesn’t even get suspicious that it might turn out to be something healthy.

I love it 🙂

I have been offering different smoothies in the morning, and calling them milkshakes, mostly because I am trying to get some more milk in the little guy, plus I can add other healthy things too.

This morning, we had Pumpkin ” Ice Cream” and it won him over with flying colors!  If you are looking for more fun banana ice creams.  Check out my 13 Healthy Banana Ice Cream Post.

Healthy Pumpkin Soft Serve ( Serves 1-2) 

Ingredients 

1 Cup of Sliced Frozen Bananas

1/2 cup of canned pumpkin

1 teaspoon of Almond Extract

1/2 milk  ( any milk of your choice) 

1 teaspoon cinnamon.  Pumpkin Pie Spice will work as well.

Blend them together.  That’s it!

* Note:  I like to add milk to my soft serve mixtures gradually.  If you add too much milk the texture will be more like a milkshake, rather than soft serve.  If your mixture turns out more like a milkshake, it will still be FANTASTIC.  But you might want to play around with what texture works for you.

This was a large portion for such a little boy.  He ate about 1/2 of it, and I helped him polish it off.  I am playing with the idea of adding some coffee to this.  Maybe cold brew concentrate?

This looks delicious! Pumpkin and almonds are both really good for you. I could see making this with something like soy milk. Yum!

I love the fall because I would eat pumpkin flavored anything. This ice cream looks mad tasty, and I would say you should totally try adding a little bit of coffee into the mix!
