Spinach, Berries and Chicken Salad


A few weeks ago, the folks over at Wellmark, asked me if I would make one of their healthy recipes, and post about it. ¬†Sure! Although, I am usually a ” make it up as I go along” gal, following someone else’s recipe for a change is a fantastic way to broaden my horizons and get out of recipe ruts.

If you read this blog often, you may notice that I rarely post salad recipes. ¬†That’s because, USUALLY when I am making a salad, I am pulling out whatever I can find in my fridge to top it. ¬†veggies, maybe some raisins. ¬†or cheese. ¬†I rarely have all the ingredients needed to make a¬†Special Salad. ¬†

What you see here is actually a 1/2 recipe. I was the only one eating it, so when I made it I cut the recipe in 1/2.



This salad actually only took a few minutes to put together.  I always keep baby spinach in my fridge.  I also, almost always keep grilled chicken in my freezer, that I can easily thaw and add to salads.  All I basically had to do was to make this yummy warm salad dressing and cut up the fruit. salad111.jpg

My favorite part about this salad, was by FAR this yummy salad dressing. ¬†I used all of my extra strawberries to sop it up at the bottom of the bowl ( mostly because I know it’s not lady-like to lick bowls ) When viewing this recipe, I wasn’t sure if the salad dressing was meant to be warm. ¬†But I warmed chicken broth in my microwave, and this is the way it turned out. ¬†It was fabulous!¬†

Warm Honey Mustard Salad Dressing 

Mix all of the following ingredients together in a dressing container or bowl. 

1/2 cup of Warm reduced sodium chicken broth

2 tablespoons of Honey

2 teaspoons of olive oil 

2 teaspoons of Mustard

Salt and Pepper
