Hidden Spinach Chicken Tacos

I will put the following ingredients in my slow cooker- 2-4 pounds of chicken breasts

1-2 Jars of salsa – seriously whatever I have on hand.

1 can of black beans or kidney beans or pinto beans.

And If I have a bag of frozen corn around I am REALLY in business!

Slow Cooker Chicken Tacos are healthy.  They have none of the sodium found in ” taco packets”.  PLUS everyone always LOVES them! Tonight, I decided to make them even HEALTHIER by adding an ENTIRE bag of spinach to the mix.  Now, I don’t really need to hide spinach in food anymore.  My two-year-old is starting to love spinach.  BUT, why not pack more nutrition into our dinner? chickentacos2.jpg Today, I cooked the chicken in the salsa BEFORE putting the mixture in the slow cooker. ( because I got a late start).  But this step is not necessary at all.   After the chicken is cooked, you can help it along by cutting it with a knife.  ( If you place this mixture in the slow cooker first thing in the morning, your chicken should shred on its own.) chickentacos3.jpg THEN I added an ENTIRE bag of Spinach.  I chopped it first.  I find that when you chop the spinach before adding it to meat mixtures, it will get ” hidden” easier.  You will probably still see it a bit.  You will eat it, not realizing its there. chickentacos4.jpg These tacos are SO healthy and So amazing.  Every single time I make this meal I say to my husband Greg ” Why don’t I make this more?”  Because it is truly so easy and healthy.  If you don’t want to add spinach, I bet you could add your favorite vegetable.  I think carrots or zucchini would hide well in this recipe too!

  2. For me anything with spinach tastes good! Add it with tacos and chicken and imagine the taste to be surreal.
