Zucchini Meatball Subs

Did you know that I basically thought up this recipe because of some nasty comments I received on another recipe?  ( It’s best to ‘Make The Best of Everything’ in these types of situations. AYE?)

Seriously though, about 4 year ago, when I was 27, something happened with me.  My attitude changed, and I stopped getting upset at little things people said or did.  And you know what?  I have been a much happier person ever since!  (  Living life without petty drama is the best. And quite frankly, I don’t have time for it anyway).

A few weeks ago, I saw a few comments on Pinterest about my cucumber subs.  ” A whole Mouth full of cucumber! Yuck!” is what people were saying.  And you know what?  I agreed with them!  Did you know that I almost never posted that recipe?  ( It’s funny that I did, because I have had over 1 million page views just on that recipe alone).  But Anyway, I thought that a zucchini sub would be easier to bite into then a cucumber.  ( Yeesh, that was a long explanation.)

I have really liked these Turkey meatballs that you can get at ALDI.  Yes, I am the daughter of an AMAZING Italian cook! And YES, my mom might freak out a bit when she finds out I am not making homemade, but I haven’t the time now.

1.) I cut the zucchini in half Hot Dog way.

2.) Scoop out the zucchini save the inside of the zucchini for a salad or something else

3.) Season the zucchini

4.) Roast in the oven at 350 degrees for 10 minutes This will help soften the zucchini

5.) Build your sub sandwich!

Now THIS was a fantastic lunch!
