Zucchini Nuggets

All, I have to do is call it a ” Nugget” and let him dip it in Ketchup.   It has become THAT easy.  🙂  

I have Hid vegetables, Fibbed about what was in his Mac and Cheese, researched on how to sneak vegetables, baked vegetables into cookies, AND even presented roasted cauliflower as ” ketchup Dippers”.  🙂

As I was making dinner tonight, I saw 2 large zucchini staring me in the face.  Now How can I prepare these in a way that he ( 2 1/2 year old) will eat them?  Oh right.  Make them into Nuggets and Dip them in ketchup.  I have done worse. 🙂zucc3

These little babies were SUPER easy to make.  I simply made my Tuna Patty recipe ( a recipe I haven’t posted yet). And instead of tuna, I added zucchini instead. AND Corn.  These are easy, You don’t need to fry these either.  You BAKE them in the oven.  collage

Zucchini Nuggets Best when served with ketchup for the under-five crowd.  Grown-ups might want to try dipping in Salsa!

1. IN A BOWL Shred 2 whole zucchini. ADD 2 cups of Panko breadcrumbs, 1 cup of cooked frozen corn, two eggs, and your favorite seasoning.

2 USING A COOKIE SCOOP or spoon.  Make 1-inch nuggets and place them on a Baking sheet.

3. BAKE at 350 degrees F for 25 minutes, flipping the nuggets 1/2 way through. zucc33
You will get Brown and Crispy Nuggets, all ready to dip.zucc6

And I promise they will gobble them up and ask for more!

Delicious! absolutely lovd them. I used an extra egg, but only BECAUSE i grated the zucchini and it looked too dry. Big winner in my house. Thanks for posting

I love zucchini. I haven’t tried it in nugget for though. Sounds like a great way to try and entice the littles (or in my case, the little and the teen 😉 )to try it.

My kids loved chicken nuggets and they are picky when it comes to food. I always have a hard time convincing them to eat vegetables. This is such a great idea!
