Pumpkin Yogurt Parfait

With this cold wave that we had here in Iowa over the last few weeks. ( Cold wave= 70 degree weather in August).  I REALLY have been in the Starbucks Pumpkin spice kind of mood.  I am almost certain they come out labor day, almost there.  Kind of.

If you have read my posts lately, you might have noticed that I have mentioned in my posts that I have been Craving particular food items lately.

Yes.  I HAVE been craving food items lately.  What can I say?

This was my gender reveal photo that I shared with my friends, family and acquaintances on Facebook last week!  I am sooo happy that my son is going to have a little brother!  I know that they are going to be best friends!

Ok, back to Pumpkin.  ( sorry, I had to share)

On Friday night I went to the grocery store because I decided I needed to make SOMETHING with pumpkin this weekend.  Canned pumpkin is  always associated with Pumpkin Pie, and perhaps junk food.  Canned Pumpkin is a great item to keep in your pantry.  It is extremely healthy, low in fat AND is much easier to deal with then an actual pumpkin:)

Making a Pumpkin Yogurt Parfait is deliciously easy! 

Ingredients 

2 cups of plain yogurt or plain Greek yogurt

1/2 can of pumpkin

2 teaspoons of honey

dash of cinnamon

1 banana

1/2 cup of granola or gluten-free ginger snap cookies  ( or something else comparable)

Mix all the ingredients together except the granola and bananas.  After the yogurt mixture is done, layer the ingredients in a glass.  Yogurt, Banana and granola.  Your parfait should have 2 layers.

This was a great breakfast that my husband and I enjoyed on Saturday morning!

I added a little honey drizzle on top of this parfait.

What a cute reveal! I loved the Game of Life as a kid. The parfait looks really yummy. Lots of good pumpkin ideas – I feel a round-up coming on! 🙂

HI! Saw this post on the Stash Party Link Party. Yum! This looks great and absolutely love the gender reveal photo! We found out in July that baby #2 is a boy (we have a girl) so our reveal pic was typical – my hubby and I biting into cupcakes and seeing the blue frosting 🙂 Congrats! Now following you via FB.
