Tater tots!

OH my goodness do I LOVE tater tots!  I was watching ” America’s test kitchen” last week and I pretty much DROOLED during the entire homemade tater tot presentation!

I have been a little obsessed with cauliflower lately.  Ever since  I discovered the Cauliflower Pizza Crust, I have been buying a head of cauliflower pretty much every time I go to the store!  I decided to kind of follow my cauliflower pizza crust recipe, but instead of adding Italian seasonings and rolling the cauliflower into pizza dough I added potato toppings and rolled them into cauliflower tots!

Loaded Cauliflower Tots 

1) Make Cauliflower Rice – Cauliflower rice is easy to make.  Just run a head of cauliflower through your food processor unit it looks like rice.  then sauté the cauliflower rice in a pan with a bit of olive oil until it is soft.

2) Mix together with – 2 eggs and ” loaded potato” ingredients.  I mixed my cauliflower with bacon bits, cheese and dill.  I WISH I had some fresh chives to use but I just didn’t!

3) Using a cookie scoop, make 1 inch pieces with the mixture

Bake at 400 degrees for 20 minutes.  For the last 2 minutes put your oven on broil so they get nice and crispy.

I cannot tell you how great these were!  These crispy tots tasted Oh so good! Especially when I dipped them in ketchup!

It’s amazing how satisfying a healthier lunch can be if you just think about it and spend a little time making it!

I will defiantly be making these babies again!
