Baked Green Tomato Fries

Last week I spent some time at my mother and father in law’s house.  They live on a 6 acre lot in Iowa where they grow almost every vegetable you can think of.  I LOVE going there and picking my dinner minutes before eating it.

Before leaving to come home, my father in law packed an entire bag of kale, sweet peppers, chives, cilantro, basil, and the last of this years tomatoes for me to take home.  Over the weekend I made an amazing Kale soup.  And for a Sunday afternoon snack, I made Baked Green Tomato Fries.

Fried Green tomatoes was one of my favorite movies as a child.  I have always wanted to try fried green tomatoes.  These are just a little different.  They are in the shape of fries.  And they are not fried.  They are baked!

Making Baked Green Tomato Fries only takes a few minutes.  They are crispy and tart!  I used whole wheat breadcrumbs and just a little olive oil to make them.

This was a great.  Sunday afternoon, watching football, folding laundry while baby was sleeping kind of snack.

Baked Green Tomato Fries 

Ingredients 
1 large green tomato.  or two small green tomatoes.
1 egg
1 teaspoon olive oil
1 cup whole wheat Italian breadcrumbs
1 cup flour 

1) Cut the green tomato into fry like shapes.  

2) In three bowls, place flour, breadcrumbs, and the egg mixed with olive oil in the three bowls. 

3) Dip each ” fry” into the bowl of flour, followed by the bowl of egg, followed by the bowl of breadcrumbs.  

4) Bake at 350 f for 25 minutes.  or until crispy brown. 

Note: This recipe will also work if you don’t want to use the egg.  I make breaded chicken nuggets all the time with no flour and no egg.  I just brush olive oil on whatever I am breading, followed by the breadcrumbs.


I served these Green tomato fries with a size of garlic dressing.  Recipe as follows.

1 tablespoon sour cream
1/2 tablespoon of mayo
1 clove of garlic minced.
1/2 teaspoon of parsley. chopped.

These had a wonderful consistency, they were crispy and a little tart.  neither my husband or I  could stop eating them.  It’s just too bad stores don’t intentionally sell green tomatoes.  I could really go for a few more of these.

Seriously. They were fantastic.  You should try to make them too.

My sister-in-law and I use quotes from “Fried Green Tomatoes” quite often. I think we're the only ones who get it. Will have to try these tomatoe fries as Jim also shared some green tomatoes with me. Hope he sees this.
