Grill fish on pineapple bark

I will just get straight to the point here.
 Instead of grilling fish on a cedar plank.  Use pineapple Bark! ( I grilled mahi-mahi)

The juices from the pineapple bark marinate your fish ( or chicken) for a smokey sweet summer flavor. * I did not come with this idea on my own.  It was first discovered by my father in law, who is a grilling genius!

How to grill your fish on a Pineapple bark Plank

1) Cut the bark off of a pineapple into the appropriate size for your fish ( or chicken) 

 

 

 

 

 

 

 

 

 

 

 

2) Season your fish with salt and pepper.  Sandwich your fish between two pieces of pineapple bark. 

3) Tie it all together with kitchen twine. 

 

 

 

 

 

 

 

 

 

 

4) Grill on each side for at least 12 minutes.  Maybe longer.  Because your fish is on the pineapple, it will take much longer than your usual fish cook time. 

 

I made a ” Brown Sugar Soy Sauce” by adding a 1/2 teaspoon of brown sugar to 2 tablespoons of soy sauce.  I drizzled it over my fish for maximum flavor.

All I can say is Yummmmmm!  I will be making this again!  Thanks, Jim!! ( my father in law). This reminds me of our honeymoon in Hawaii almost 6 years ago.  Both Greg and I ate lots of Pineapple and a great amount of mahi-mahi when we were there.

I would love to try this with a light and flaky fish. I was also thinking it would be good with a salsa made from pineapple, red bell pepper, onion, and cilantro. My mother-in-law and I are dying to try this soon!

I tried this with Walleye and did no like the way the texture came out. Maybe it was the type of fish but it had a texture like paste. Maybe I will try the chicken.

Chicken breasts, cut to an even thickness, work very well with pineapple planks. Use a meat thermometer to ensure chicken is done to the correct temperature.

Hi Kristen..
Your father in law really is a grilling genius. I don’t know if you realize this but pineapple contains an enzyme called bromelin that breaks down proteins. Thats why its often used to tenderi.se meat, why you cook ham with it, and why you can’t put chunks of it in jello.

Not sure what effect if any this would have on fish besides making it tast awesome, but I’m guessing it would make it even more tender and succulent….you can read more about it here http://science.howstuffworks.com/innovation/edible-innovations/pineapple-enzyme-tenderize-steak1.htm

Unfortunately we don’t really get the weather here in dublin for many bbq’s, but I can’t wait to give this a try in the summer.

Betsy, as far as I know you do not eat the bark of the pineapple. It is only for taste. You could grill it between 2 thick slices of pineapple and then eat it. We grill pineapple all the time , and when we do we make a brown sugar sauce with brown sugar, vanilla , and butter and brush on the pineapple when grilling. Yummy. Oh I cant wait till summer , then again, there is always the garage….. (we live in chi town).
