Jalapeno Mango Sticky Rice

Ingredients

  • 1 teaspoon canola oil
  • 1 jalapeno pepper, chopped
  • 1 tbsp cilantro, chopped
  • 1 8 ounce can mango and juice
  • 1-1.5 cups water
  • 2 cups jasmine rice or basmati rice

Instructions

  1. Set your Instant Pot to Saute

  2. Add oil jalapeno and cilantro and saute for 1-2 minutes. 

  3. Add mango, water, and rice.  Stir.  You will want your total liquid ( mango, juice, and water.)  to add up to 1 3/4 cup. 

  4. Place lid on Instant Pot and cook on the rice setting for 12 minutes. 

  5. Vent or let naturally release.  It doesn't matter

  6. Serve!
