Balsamic Barbecue Sauce Pulled Chicken

Ingredients

Balsamic Vinegar Barbecue Sauce

  • 1 small caramelized onion
  • 2 cloves garlic
  • 1 cup balsamic vinegar
  • 1/3 cup brown sugar
  • 1/3 cup ketchup
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon ground mustard
  • 1 dash salt
  • 1 dash pepper

Chicken

  • 2 pounds chicken
  • 1 cup water

Instructions

  1. Set your Instant Pot to saute, and make barbecue sauce. 

  2. Add all of the barbecue sauce ingredients to your Instant Pot in no particular order and whisk together over the heat.  

  3. Turn off the saute setting.  Add chicken and water

  4. Place lid on the Instant Pot and cook on high pressure for 25 minutes

  5. Vent. Remove lid and shred chicken.
