Pressure Cooker Applesauce Pulled Chicken

In about a month, I will start my third year of packing school lunches.  And I will continue packing these said school lunches for the next seventeen years.  Are you feeling exhausted yet?   Here are two important things to remember, though, hopefully, my kids will start to make their lunches when they reach their later elementary years. And, packing lunches doesn’t seem so much like a chore when you realize how important it is to nourish kid’s minds and bodies when they are at school learning all day.  And after realizing what kids in France get for their school lunches, I have decided that it is pretty significant to feed my kids nourishing real food.

This applesauce barbecue pulled chicken is sweetened with applesauce but makes for a healthy lunch sandwich that the kids will love!  Pepperidge Farm® Bakery Classics Slider Buns are the perfect size for lunch sandwiches, especially for those kiddos!

 

My sons love barbeque, pulled chicken sandwiches.  I thought that adding applesauce would be a fun way to make their favorite chicken naturally sweet but still wholesome.  Adding applesauce to this chicken was my six-year-old son’s idea.  I think he has caught my cooking bug.

Making this applesauce pulled chicken in my pressure cooker took minutes.  If you don’t have a pressure cooker, don’t fret!  You can quickly make this in a slow cooker or a saucepan on the stove as well.

Applesauce Pulled Chicken

Ingredients

  • 2 pounds boneless chicken breast
  • 1.5 cups applesauce
  • 1/2 cup barbecue sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder

Instructions

  1. Add chicken, applesauce, barbecue sauce, and spices into your pressure cooker. 

  2. Seal the lid and cook on high pressure for 25 minutes.

  3. Open lid. Shred chicken in the sauce and make sandwiches 

Optional: other sandwich fixings. Cheese, lettuce tomato, pickle, etc.

Pressure Cooker Method: Add chicken, applesauce, barbecue sauce, and spices into your pressure cooker. Seal the lid and cook on high pressure for 25 minutes. Open lid. Shred chicken in the sauce and make sandwiches on Pepperidge Farm® Bakery Classics Slider Buns with your favorite fixings.

Slow Cooker Method: Add chicken, barbecue sauce, and spices to your slow cooker. Cook on low for 4-6 hours. Shred the chicken about 1/2 way through. Assemble sandwiches on Pepperidge Farm® Bakery Classics Slider Buns with your favorite fixings.

Stovetop method: In a saucepan over medium heat, mix applesauce, barbecue sauce, and seasonings until they form a sauce. Add chicken and cook the chicken in the sauce over low heat for 20-30 minutes. Remove chicken and shred. Place the chicken back in the sauce and mix. Assemble sandwiches on Pepperidge Farm® Bakery Classics Slider Bun with your favorite fixings.

It is crazy how fast this summer has gone by. These sandwiches are also delicious for get-togethers, picnics, and easy summer lunches as well! I like to keep an assortment of fruits, vegetables, cheese, and snacks to pack in my kid’s meals. There are so many healthy options that kids love.
