I combined two of my favorite things! Back when I lived in the Quad Cities, my favorite restaurant was a fantastic Thai restaurant called Exotic Thai. Whenever my husband went out of town, ( this was before kids) I would get their pineapple fried rice and some coconut curry, and I would eat it all week.
I took a few of the flavors of the pineapple fried rice and made sticky rice in my Instant Pot!
Okay, let me back up a little bit. I have been an Instant Pot owner for about 18 months now, and some of my favorite things to make in it are simple things. Like sticky rice ready in twelve minutes.
I have learned that to make rice ” sticky” you change the rice/water ratio. In this recipe, I replaced some of the liquid with crushed pineapple. Wow, this turned out great!
Just in case you’re new at cooking rice in your Instant Pot, here is a video that will help guide you!
