I am going to try to make this short today. A few weeks ago I was up late and reading a thread all about technology on a Reddit thread when I read opinions about people not liking to hear ” life stories” about recipes they find online. So I guess, I’m sorry? Well, not that sorry though. I think that I usually keep my little stories straight to the point.
I could expand more on this subject, but I will keep this simple for you. I like cream cheese. I love sun-dried tomatoes, and I thought they would taste good with chicken. Okay?
I am always looking for new recipes to make in my Instant Pot. Mostly because I hate washing a bunch of pans after dinner. I generally only want one container to clean, and that is the main reason why I love my Instant Pot so much.

This chicken is done in 20 minutes, including prep time. This is such an easy weeknight meal.

Creamy sun-dried tomato chicken
- 1 8 ounce jar sun dried tomatoes in olive oil
- 1 tablespoon paprika
- 1 teaspoon onion powder
- 1 16 ounce block of cream cheese
- 5-6 basil leaves
- 3 cups fresh spinach
- 1.5 pounds boneless chicken breast
Set your Instant Pot to saute setting.
Make sauce. Add sun-dried tomatoes, paprika, onion powder, basil and cream cheese together. Heat and stir into a sauce.
Add spinach and stir in
Close lid to the Instant Pot and cook on high pressure for 12 minutes
Remove lid and serve.
My kids really loved this meal. but come on. Cream cheese and sun-dried tomatoes=yummy. Story done.
