Springtime Chicken Salad and Springtime planting with Theisen’s

After a longer than usual Iowa winter, my entire household is looking forward to warmer weather.  There is nothing quite like the start of spring.  Watching the leaf buds start to appear on the trees, opening the windows and letting that refreshing spring air flow through the house, and finally getting to eat those absolutely delicious locally grown spring vegetables.

We have an ever-expanding garden in our backyard that I am looking forward to planting in as soon as we get some consistently warmer weather.   There is nothing quite like heading outside to your yard to pick your dinner.  During warmer months, our schedules are often booked and I like to keep dinner as simple as possible.

This spring chicken salad is the perfect thing to keep in the fridge for healthy lunches, snacks, and dinners.  My husband and I love this chicken salad over a bed of lettuce, while my kids love eating it with crackers.  This spring chicken salad is made with sugar snap peas, and perfect al dente cooked asparagus.  Two of the best spring crops.

Last weekend, I drove a few miles north to Charles City, Iowa to Theisen’s so I could pick up some essential gardening supplies for spring planting.

Theisen’s has everything you need for a plentiful, thriving garden.  They had a huge assortment of vegetable seeds, pots,  garden tools and potting soil.  I am very familiar with Theisen’s, I discovered them back in the early 2000’s when I attended college in Dubuque.  Theisen’s was actually started in Dubuque, in 1927 and has grown into 23 stores, spanning 4 generations. Not only does Theisen’s serve many charitable causes and they sure know how to serve their customers!

Theisen’s carries a plethora of handy garden items. Plus, they have some great ideas for inspiration on their social media handles.  You can find them on Facebook, Pinterest, and Twitter.

I picked up some seeds for my vegetable garden.  Since the weather has been cold, I have been able to start my spring planting inside.   Some of my favorite spring crops include lettuce spinach, herbs, rhubarb, peas and of course asparagus.

I picked up some of my favorite spring vegetable seeds for planting while I was visiting Theisens.

Asparagus

Green Beans

Okay, back to this amazing chicken salad recipe.  This was such a big hit with my kids and such an easy supper.  During the springtime, things get really hectic during weeknight evenings.  We have music lessons, soccer, spring concerts, t-ball, and more.   This Spring chicken salad is not only a great way to get in all those spring vegetables, but it is an easy recipe for making-ahead.

Spring Chicken Salad

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 1 pound cooked shredded chicken or canned chicken
  • 1 bunch fresh asparagus
  • 1 cup sugar snap peas
  • 1 tablespoon fresh dill or dillweed
  • 2-3 teaspoons fresh parsley
  • 1/2 cup Greek Yogurt
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Bring water to a boil on your stove top.  Cook asparagus for 5 minutes, then immediately run the asparagus under cold water.  This will result in perfectly al dente asparagus.  

  2. Steam sugar snaps peas over the stove top and cook the chicken. 

  3. In a bowl, mix chicken, seasonings, herbs, Greek yogurt, mayonnaise and lemon juice together. Fold in asparagus and sugar snap peas.  

  4. Refrigerate the chicken salad until you are ready to eat it.  Serve it with crackers, bread or over salad. 

I am so glad I was able to pick up some much-needed items for my garden at Theisens.  I was able to pick up some really great deals!  Have a great time shopping, and don’t forget to pick up some popcorn while you’re there!
