I came up with this Chili-Lime Crack Chicken recipe after buying a Chili-Lime Greek Yogurt dip at Aldi. This dip was so good, that I knew I wanted to try a creamy chili-lime chicken recipe. I immediately thought of many” crack” chicken recipes that I keep seeing floating around Facebook. ( from multiple places.)
Regular ” Crack” chicken is where you mix cream cheese, and ranch dressing mix with shredded chicken and then maybe some cheese. I made cream cheese shredded chicken but flavored it with chili powder and lime juice instead. I can’t say that I generally use cream cheese in my cooking, but I am glad I did and this chicken was out of this world! The reason why I still call this ” Crack” chicken is because I used cream cheese, which is a little like ” crack”. I mean, who doesn’t love cream cheese?
I made this chicken in my Instant Pot, but I am sure you could make it in your slow cooker as well.
I have two things that are important for you to know about this recipe.
- DO NOT ADD LIME PEEL. A few years ago, I added a lime wedge into some salsa chicken in my slow cooker. lime peel does not make chicken taste good in a slow cooker/instant pot setting. Just add lime juice. and maybe a little zest.
- I probably cook my chicken longer than is necessary for my Instant Pot. I prefer it this way. When I am making shredded meat in my Instant Pot, I like it to shred really easily. A few minutes of extra cooking time can literally make chicken fall apart.
I created a little video for you. This recipe is so easy and very few ingredients are required.
So how do you serve this chili-lime crack chicken?
However, you like!
Serve with rice
Over a salad
Honestly, you can use whatever starch or vegetable you have around.
I also added smoked paprika to this recipe. I don’t think it is absolutely necessary, but I actually love smoked paprika and will add it to things whenever I get the chance.
Chili-Lime ” Crack Chicken”
2 lbs of chicken breast
1 tablespoon of chili powder
1 tablespoon of smoked paprika- This is my favorite brand
juice of two limes
1 package of cream cheese
dash of salt
1 cup of water
Instant pot Method: In your Instant Pot, add chicken, chili powder, smoked paprika, juice of two limes, 1 package of cream cheese, salt and water. Close your Instant Pot and cook on high pressure or on the meat setting for 30 minutes if you want your chicken to instantly fall apart when it is done cooking. You can also cook it for 15 minutes if you want to manually shred your chicken. Mix the shredded chicken with all of the other ingredients and serve!
Slow Cooker Method: Add the ingredients to your slow cooker, with only 1/2 cup of water. Cook on low for 6-8 hours. Shred chicken once it is easy to pull-apart and mix with all of the other ingredients in the slow cooker.
This was such a hit with my family. We have been adding lime to a lot of our meals lately, so I figured it would be. I love making shredded meat and then using it for multiple dinners and lunches. I can’t wait to make nachos with this!
