After all three of my kids were born, I had friends bring me meals. It is an amazing feeling to know people care about you when your family is in need. In turn, I really love making meals for families in need. It is a great feeling, especially since cooking for people is a way I like to share myself with others.
Some days just call for something rustic and delicious. I love soups and stews when it is cold outside. This Beef stew has the essentials. Carrots, onions and potatoes. But I also added some Southwestern flair. ah mazing.

This charity benefits ALS therapy Institute. ALS is a disease that impacts the nerve cells in the brain and spinal cord, specifically those that control voluntary muscle movement. It is a progressive neurodegenerative disorder.

An amazing way to help out a friend is to bring them a warm pot of this Southwestern Stew. Check out this video I made! This meal is easy peasy!
Southwestern Beef Stew
1 pound of stew mea- beeft
2 tablespoon of corn starch
4 tablespoons of taco seasoning – taco seasoning recipe below
1/4 cup of chopped celery
1 large bell pepper- chopped
3 carrots- chopped
4 small yukon gold potatoes- chopped and peeled
1 small onion- chopped
2 cups of frozen corn
2 cups of beef broth
2-3 green onions- chopped for garnish
Method: In a slow cooker, place beef and mix the beef with corn starch and taco seasoning. add celery, bell pepper, carrots, potatoes, onion and frozen corn. Add beef broth and cook on low for 4-6 hours. Add green onions before serving.
Taco seasoning: 2 teaspoons of chili powder, 1 1/2 teaspoons of ground cumin, dash of salt, 1/2 teaspoon of onion powder, 1/4 teaspoon of oregano, 1/4 teaspoon of garlic powder.
This beef stew was really good, and I loved the punch of southwest flavor!
