Last winter, I made these Slow Cooker Chicken Gyros and I have been obsessed with them ever since. There amazing. In fact, after the Slow Cooker Chicken Gyros. I also made Slow Cooker Beef Gyros, Sheet Pan Chicken Gyros and now, I have turned my Slow Cooker Chicken gyros into the most amazing soup!
I don’t know what it is about this combo of flavors. Maybe it’s the lemon-garlic-dill. I am not sure.
I love my Instant Pot. I have actually had one for almost a year now, but it really did take me a while to figure it out. Now I love it, I cook anything and everything in this thing. Rice, quinoa, mashed potatoes, loose meat and especially soup. I love how you can cook up a comforting soup in a matter of minutes!

Instant Pot Chicken Gyro Soup
2 tablespoons of olive oil
1-3 cloves of minced garlic
1/2 small onion, chopped
1 and 1/2 pounds of chicken
1 tablespoon of Greek seasoning. Cavender All Purpose Greek Seasoning 3.25 oz“>This is what I use.
1 teaspoon of dried oregano
1/3 cup of lemon juice
1/2 cup – 1 cup of Greek Yogurt- depends on how creamy you want it!
1 cup of cherry tomatoes, or more
2 cups of spinach
4 cups of broth. Chicken or vegetable broth
Method: See video tutorial above. Set your Instant Pot setting to saute. Add olive oil, garlic and onions and stir until the onions are translucent. Add chicken, seasonings and lemon juice. Add tomatoes and spinach. Add chicken broth. Close lid and set press the soup setting for fifteen minutes. After the soup is done cooking, vent and remove lid.
