Every night after dinner, my husband prepares his lunch for the next day, He takes out a container and always grabs first dibs from our leftovers. Don’t get me wrong, I love that he does this.
- It saves us money.
- He loves the food I make, so I take that as a complement. ( It is even better when my five-year-old demands to have leftovers in his lunch too.)
- He is trying to eat healthier- so I am happy he is taking homemade food for lunch.
But then I realized, that I need to start doing this too. Why? Well, too often my lunch consists of the crust from my toddler’s sandwich, and then maybe a handful of popcorn, and maybe even some fruit snacks. ( I know.)
I would really love to have the time to also have a healthy lunch. Even though I am at home during the day, I really don’t have time to cook extravagant lunches for myself.
My family is still at a size, where we have sufficient leftovers. I have three boys, one still only drinks baby milk. I only have one child who is a significant eater. There is no reason why I shouldn’t be doing this every night, packing healthy lunches for the next day.
So, I hopped on the bandwagon, and got an Insta Pot. I have been cooking all kinds of things in it. So far, pulled pork is my favorite thing. I will say, in the past, I never loved pulled pork. After making pulled pork in this pressure cooker, I don’t think that I will ever make it in my slow cooker again.
That being said, if you don’t have a pressure cooker- you can make this in your slow cooker too. I would just make sure you have a leaner piece of pork. I really don’t like the texture of fattier cuts of pork in the slow cooker.
Another thought. If you’re not a huge fan of pork, this recipe will work with chicken too. I used store bought sweet and sour sauce, but you can find homemade recipes online if you want to.
Sweet and Sour Pork Lunch Bowls Recipe will Yield 4-6 Lunch Bowls
2 lbs pork roast
1 bottle of sweet and sour sauce
3 gloves of garlic
salt and pepper to taste
1 can of pineapple
1 cup of baby tomatoes
6 sweet peppers, chopped
2 cups of snow peas
2 cups of basmati rice – uncooked- or a rice of your choosing
4 cups of water
4 green onions
Method: In your pressure cooker, saute pork roast for a few minutes on each side. sprinkle with salt and pepper. add minced garlic and sweet and sour sauce. cook in the pressure cooker for 90 minutes. pull pork apart with a fork. Cook rice. In each lunch bowl, add 3/4 cooked rice, 1/2 cup of pulled pork, 4-5 pineapple pieces, baby tomatoes, sliced peppers, snow peas and green onions. Add any other veggies you would like.
