Looking for an easy dinner idea? This Taco Polenta Bowl is my ideal dinner for so many reasons.
- It is loaded with veggies, and includes avocado.
- It takes less than 15 minutes to prepare.
- I usually have most of these ingredients around, so it doesn’t involve much planning.
- My kids will eat it.
- It is meatless! I try to serve my family at least one meatless meal per week- in order to help the environment. Serving my family this veggie-filled dinner helps us keep our #Vegolutions for 2017.
There are a few things about this polenta bowl that I need to discuss.
First, polenta isn’t as complicated as one might think. You can find polenta being served in fancy restaurants. Polenta is just a fancy name for corn meal mush. It is traditionally a peasant food and can be made out of only cornmeal and water.

Making Polenta is easy. It is also very light. It is just made out of cornmeal, water and a little salt.
You can add any taco toppings to these taco bowls. I added some of my favorites. queso fresco cheese, avocado, bell peppers and salsa. You can also add lettuce, tomatoes, black olives or anything else you like.
Taco Polenta Bowls – Serves 4
1 cup of cornmeal
4 cups of water
dash of salt
1/2 teaspoon of butter- optional
1 cup of MorningStar Farms® Chipotle Black Bean Crumbles™ – use 1/4 cup for each taco bowl
1 cup of Great Value™ frozen corn- thawed- use 1/4 cup for each taco bowl
1 avocado- sliced
1 bell pepper- sliced
1/2 cup of Queso Fresco Cheese
1/2 cup of salsa
1/4 cup of greek yogurt- or sour cream
red pepper flakes
other seasonings and toppings of your choosing
Method: Make Polenta. Bring 4 cups of water to a boil. Salt the water and slowly add 1 cup of cornmeal, while whisking vigorously. Once the cornmeal has been mixed in- remove from heat and pour directly into a serving bowl. Chop vegetables, heat up corn and MorningStar Farms® Chipotle Black Bean Crumbles™. Arrange the toppings in a bowl and season to your specifications. Enjoy.
These Taco Polenta Bowls were just so good! I thought that these Chipotle Black Bean Crumbles™ were smokey and flavorful.
