It is super sad that the photos of this French Onion Pot Roast didn’t turn out better. Because, this pot roast was quite amazing- if I say so myself. Here is why it turned out so well.
1). I used a good quality piece of meat. Honestly, I don’t waste my time buying cheap meat. I don’t buy expensive meat either. I look for good deals on good meat. ( otherwise, I might as well just make a meatless meal.) What I have here is a tenderloin pot roast that I got on a good sale- right after Christmas.
2.) I used all the flavors one would find in French Onion Soup on this roast. I discovered French Onion Soup at Panera, not long ago and I am hooked!
3.) I cooked this roast in the slow cooker all day. YUM!
This roast was incredible- but I might actually like the French Onion flavored potatoes even more. I don’t always like to cook potatoes and vegetables with meat in the slow cooker, but these turned out fantastic.
The Best French Onion Pot Roast
1 2lb beef roast- any cut of your choosing
1/4 cup soy sauce
1 package of dried onion soup mix
1/4 cup of Worcestershire Sauce
1 teaspoon dijon mustard
1 beef bouillon cube
1/4 cup water
1-2 caramelized onions
1-2 tablespoons of olive oil
3-4 chopped Yukon gold potatoes
2-3 sprigs of thyme
Method: Chop the onions and caramelize them in a saucepan over medium heat. Set Aside. In a slow cooker mix soy sauce, Worcestershire sauce, beef bouillon cube, water, onion soup mix and dijon mustard. whisk the sauce together. Place Beef Roast and Potatoes in the slow cooker, and top with caramelized onions and thyme. Cook on low for 6-8 hours.
I know I kept this post super short, but I loved this roast. It was delicious, and my family loved it too. I loved all these French Onion Soup flavors happening here. I will make this again soon.
