Both of my kids have been in preschool for about a month now. They are really getting used to our new schedule. Our morning schedule can be pretty intense. From the moment they wake up, to the moment we are ready to leave the house, it’s go-go-go.
I have started preparing make-ahead breakfasts for my kids to eat in the morning. I like to make sure that i feed them hearty food on their school days. Food with substance and that lasts.
These Mini breakfast pizzas were really fun to prepare with my boys, plus I kept them in the fridge for several days. I just warmed them up in the microwave as I needed them. They were delicious and lasted.
I included Johnsonville’s fully cooked breakfast sausage in this recipe. These patties are ready in 40 seconds, and couldn’t be tastier. These patties are hearty, and easy to prepare.

My kids helped me prepare these mini breakfast pizzas in chef aprons and hats that Johnsonville sent them.
I used tortillas for the breakfast pizza crust. You could also make these on English muffins or Mini bagels. Prep for this was super easy. I simply scrambled eggs, cooked the Johnsonville sausage in the microwave and put out some cheddar cheese, and the kids made them!
Mini Breakfast Pizzas- Yield’s 15 mini pizzas
5 medium sized flour tortillas
2 eggs- scrambled
6 Johnsonville Sausage already cooked links- or three patties
1 cup of cheese
optional: additional toppings
Method: Preheat oven to 350 f. Cook the sausages in the microwave, scramble eggs. Using a cookie cutter, glass or mason jar lid, cut circles out of the flour tortillas. Cook the tortillas in the oven for 3 minutes and remove from oven. arrange the breakfast pizza toppings on the tortillas and bake in the oven for an additional 8 minutes. Remove from oven and serve.
These were so good and so easy! What a fast breakfast!
