I have been obsessed with making my own Tzatziki sauce all summer. I love making dips with Greek Yogurt. Plus Dill is my all-time favorite herb. I used to always buy the large container of Tzatziki sauce at Sam’s club, but it turns out that homemade is a hundred times better.
I have been thinking about coating and baking chicken with Tzatziki for some-time now. A few years ago, I made this Crispy-Baked Sriracha Chicken– where I coated the chicken with yogurt and sriracha, followed by breadcrumbs.
It didn’t seem appropriate to coat Tzatziki chicken in breadcrumbs. I wanted to keep with the Greek theme here, so I made pita chip crumbs and baked this chicken until it was moist and crispy.
Not only did the yogurt make this chicken super moist, but I always beat my chicken with a meat tenderizer before cooking it. It makes a HUGE difference in the chicken’s taste and texture.
Pita Chip Crusted Tzatziki Chicken ( serves 4-6)
1 pound of boneless-skinless chicken breasts- cut into 5-6 smaller pieces
2-3 cups of pita chip crumbs
1 1/2 cups of Greek Yogurt Tzatziki – recipe below
Greek Yogurt Tzatziki Sauce
1 1/2 cups of Greek Yogurt
juice from 1/2 a lemon
2 teaspoons of dill weed or fresh dill
1 glove of garlic – minced
sea salt to taste
Method: Preheat oven to 350 f. Mix Tzatziki sauce and place in a baking dish. In second baking dish place smashed pita chips. Cut chicken breasts to size, and beat them down with a meat tenderizer. coat each piece of chicken with Tzatziki sauce, followed by pita chip crumbs. bake the chicken for about 20 minutes. Top chicken with dill. Make more Tzatziki sauce for additional dipping if desired.
This chicken went fast. My kids love Greek flavors, as do I. My two-year-old son loves anything with Greek Yogurt and the flavors were just perfect.
