Back when my husband and I lived in the Quad Cities, our favorite restaurant was Exotic Thai. When I was pregnant with my first son, I ordered out from Exotic Thai all the time with my co-workers. Now, five-years later, I am pregnant with my third son. I am living far away from the Quad Cities these days, so I have to make my own Thai food when I get a craving.
I made a fusion of two dishes I used to order all the time. Coconut Curry and Pineapple Fried Rice ( Maybe next time, I will make a homemade pineapple fried rice.)
This rice was a little spicy. I added a nice amount of curry powder, ginger and red pepper flakes. If you don’t want yours as spicy, you could skimp on those a little.
I do believe that there is something magical about coconut and curry together- it is just so yum. I used a can of coconut milk. Coconut milk is fatty, but healthy. This is actually a vegan dish. I added no meat, but added roasted cauliflower instead. You could add chicken, shrimp, veggies or any protein you like.

This recipe makes quite a lot of fried rice. My family had enough for dinner and several lunches. You could cut it in half if you don’t want this much.
Coconut Curry Fried Rice –Serves 8
2 cups of uncooked rice- I used Jasmine rice
4 cups of water
1 can of coconut milk
2-3 teaspoons of curry powder
1-2 teaspoons of ground ginger
1 teaspoon of sea salt
1 teaspoon of red pepper flakes
2 carrots- shredded
1 head of cauliflower- cut and roasted in the oven
3 green onions
1 bell pepper -cut into thin slices
1/3 cup of peanuts- optional
Method: Prepare ingredients. Cook Rice in a rice cooker or over the stovetop in the water. shred carrots, cut and roast cauliflower, cut green onions. Once the rice is cooked, place it in a large saucepan or wok with coconut milk and spices ( not the red pepper flakes.). Cook until flavors are mixed. add cauliflower, carrots and bell peppers, continue to cook until the veggies are soft. Remove from heat. add green onions and peanuts, red pepper flakes and serve.
