A few times a year, my husband’s roommates from college get together. When we do, there is always a lot of food and drinks. My friend Bridget is known for bringing her signature appetizer, cucumber sandwiches to almost every get-together. I always look forward to her cucumber sandwiches, and I always eat too many.
Nowadays, many of my peers and family members eat a gluten-free diet. I wanted to create a gluten-free version. I made these gluten-free cucumber bites using Van’s Lots of Everything Crackers. I found them at Target. Right now, you can obtain a coupon for Van’s crackers using the Cartwheel app.
I love all the flavors in cucumber sandwiches. Garlic. Dill. Onion. Plus it is mixed with cream cheese. What’s not to love?
