I LOVE going out for healthy-restaurant semi fast food sandwiches. But they are just so expensive! A few weeks ago I decided that I just needed to stop.
I started buying higher quality bread so I could start making fancy sandwiches at home. I have had a little obsession with Caesar Salad lately, so I decided that I would make a delicious Bacon-Avocado Caesar Salad Sandwich.
The fancy bread I used in my fancy sandwich? Pepperidge Farm® has come out with a new line of bread called #HarvestBlends. These new varieties are now available in grocery stores all across the Midwest!
I loved the taste of all three of this Pepperidge Farm Harvest Blends bread . I tend to like my specialty bread to taste nutty. All three of these add a lot of depth to my ” fancy adult sandwiches” that I have been making at home
I used the Seeded grain bread for my sandwich. All of the flavors are wonderful. We really loved peanut butter toast on the ancient grain flavor.
This Bacon-Avocado Caesar Salad Sandwich really fit the bill. I have been into adding lots of vegetables to my sandwiches lately, so why not just add a salad? Plus, Who doesn’t love bacon and avocado? I have made this sandwich several times. Sometimes without the bacon. Sometimes without the avocado. It turns out wonderful every time.
I actually broiled parmesan cheese on this bread before building my sandwich. The bread turned out just crispy enough.
Bacon-Avocado Caesar Salad Sandwich
2 slices of Pepperidge Farm Harvest Blends bread- the seeded grain variety
1/4 cup of shredded parmesan cheese
1-2 tablespoons of Caesar Salad dressing
1 cup of Romain lettuce
1/4 cup of cubed chicken- optional ( This can be leftover chicken, canned chicken or whatever you have)
1 slice of cooked bacon
1 tablespoon of mashed avocado
Method: Place 1/2 of the parmesan cheese on the bread and broil on high until the cheese has melted and your bread is somewhat crispy. Remove from oven and set aside. Make your caesar salad. In a bowl, toss lettuce, Caesar dressing, the second 1/2 of the parmesan cheese and chicken in a bowl. Cook Bacon and cut avocado. Build your sandwich. Place a generous amount of salad on one slice of bread. add slice of bacon and spread avocado on the other slice of bread. Mold sandwich together and enjoy! Leftover Caesar salad? stick it in the fridge for another sandwich!
