It was lunch-time yesterday, and I had several zucchini in my fridge, staring at me.
I decided to try a new, low-carb pepperoni pizza recipe. These pepperoni pizza zoodles took only a few minutes to make and tasted just like pepperoni pizza. This was a fabulous lunch.
I love my vegetable spiralizer. I use this one. These noodles just take a minute or two to make.
Zoodles take hardly any time to cook. I have found, that sauteing them in a skillet, until they turn tender usually does the trick. Once the zoodles turned slightly tender, I added pasta sauce and let the mixture bubble for a few minutes before adding the “pizza toppings.”
Pepperoni Pizza Zoodles
1 large zucchini
1 clove of garlic
2 tablespoons olive oil
salt and pepper to taste
1 cup of pasta or pizza sauce
1/2 cup of mozzarella cheese
1/4 cup of pepperoni slices
other pizza toppings
Method: Make Zoodles using a vegetable spiralizer. In a skillet, add olive oil and 1 clove of garlic, minced. cook for a minute or two. add zoodles and cook until the zoodles are slightly tender. add pasta sauce and cook until the sauce is bubbling. add cheese, pepperoni and any other “pizza toppings” you like. Serve.
I absolutely love zoodles. I wish I remembered to make them more.
