Last week my mother-in-law called me to ask for an old recipe. My slow cooker salsa chicken with hidden spinach. So I went back to read this really old post and then I realized that I used to post food with no real recipe. This blog has come very far since then.
I was going to re do my slow cooker salsa chicken with hidden spinach. But then I got a better idea. Hidden Cauliflower! So I would like to talk about Hidden cauliflower for a second, and why it’s so great.
- Cauliflower easily adopts other flavors. So when you are trying to serve meals to young kids, they won’t necessarily see it.
- Cauliflower hides really well in white meats – like chicken or pork
- Adding cauliflower to a slow cooker meat dish really makes your meat go further. I only used 2 chicken breasts in this dish and one really large head of cauliflower.
- Cauliflower has oodles of nutrients and is really low in calories- so it is an amazing “filler”. You can eat more for less calories. I love that.
I use my slow cooker, but I don’t post slow cooker recipes on here all that much. I love crock pot meals with just a few healthy ingredients. I only used four ingredients in this recipe. ( I realize that a jar of salsa contains more than 1 ingredient. but stay with me here.)
In the morning, put these four ingredients in your slow cooker. You can also add a can of beans if you like. At dinnertime, you will have the best tasting salsa chicken. And you can make whatever you like with it.
We made a enchilada casserole with this cauliflower salsa chicken, and it was just amazing. I usually choose the medium green enchilada sauce. I made the below enchilada with the leftovers for lunch.
Slow Cooker Salsa Chicken with Hidden Cauliflower
2 large boneless-skinless chicken breasts
2 medium sized jars of your favorite salsa
1 bag of frozen corn
1 large head of cauliflower- chopped
optional- 1 can of beans
Method: Place all of the ingredients in your slow cooker and cook on low for 6-8 hours or on high for 4-5 hours. About 1/2 way though, remove chicken and cut. put the chicken back into the slow cooker.
This didn’t last long. It was super easy and delicious. I am planning on making this soon. I happen to love cauliflower and this was delicious.
