Over the weekend, I made this cucumber dill hummus for my friend’s wedding shower. I then was showing my mom all of the awesome flavors of hummus on Pinterest. When we were driving home yesterday, and I started thinking up new hummus flavors.
I figured that this sweet hummus would taste good. Last year, I made Peanut Butter Hummus that turned out wonderfully.
I used many of the same ingredients that I used in my Flourless Banana Bread.
Vanilla and Cinnamon.
This tasted exactly like banana bread but only took five minutes to prepare.
Also, instead of using olive oil, like in regular hummus. I used coconut oil to make it creamy.
And what do you dip in banana bread hummus?
I dipped teeny gingersnap cookies.
Banana Bread Hummus
1 can of chickpeas, rinsed and drained
2 tablespoons of coconut oil
2 semi-ripe bananas
3/4 cup of walnuts
1 teaspoon of cinnamon
1 teaspoon of no alcohol vanilla ( trader joes)
Method: Blend all of the ingredients in a food processor and serve. If it isn’t creamy enough for you, you might want to add more coconut oil
This turned out great. Kids loved it. I will be making this again when I want banana bread and don’t feel like baking.
